NGPH on "2 WP Installations in seperate folders on the same host... not working"

Ok, I have read many posts but still can not really understand my issue here. I am very new to this so please excuse my simplistic explanation.

I have 2 registered domains (www.domain1.com, http://www.domain2.com)
I have 1 hosting company
I have created 2 seperate installations of WP 3.5.1 in different folders (/root/WP_install_1, /root/WP_install_2)

My objective is that when someone visits http://www.domain1.com they see the WP installation WP_install_1. When someone visits http://www.domain2.com they see the WP installation WP_install_2.

My current situation is this. I view http://www.domain1.com and I see WP_install_1 = OK. When I login to http://www.domain1.com/WP_install_1/wp-admin I see the Dashboard etc. = OK. I view http://www.domain2.com and I see WP_install_1 = NOT OK. When I login to http://www.domain2.com?WP_install_2/wp-admin = I see the Dashboard etc. = OK.

I thought my problem was that I had not pointed the domain http://www.domain2.com to /WP_install_2 subfolder. When I do this, I see the correct WP installation but then I no longer can login to wp-admin for WP_install_2.. I receive an "500 internal Server Error" message.

I thought by seperating the different installations of WP in different folders I would not have a problem. I think it must be something to do with my domain pointing or root files...

I hope this question makes sense and someone can help me? Thanks in advance.
